Reindeer Poop Recipe

Over Christmas break, a friend of my Mom's gave her this quick & easy recipe, so I had to give it a try. Hence, the name "Reindeer Poop". The family LOVES them. I am now in charge of making them for every occasion. 
A few weekends ago, we hosted a bridal shower for my beautiful cousin, Misty.

Her wedding colors are hot pink & lime green. So, in order to stay with her theme, this was the final product.
 [yes, I did transfer them from this colorful platter to something a little less colorful!]

Ok, so here is the recipe:
Ingredients:
  • 1 pack of double stuff Oreos
  • 1 package [8 oz.] of cream cheese
  • white chocolate chips [or whatever flavored icing/chocolate you'd like]
And here's what you do:
  • Put all of the Oreos into a gallon sized zip-lock bag. 
  • With some type of beater [the palm of your hand, the end of a spatula, or if you have a meat tenderizer that'll work too], beat the bag until the Oreos are finely crushed.

  • Transfer them into a medium-sized bowl.

  • Add room-temperature cream cheese to the cookies and mix well. It will become a little gushy. This is good.

  • Dip with a spoon and roll into small balls, placing the finished balls on a baking sheet.

  •  Melt the chocolate chips. Dip with a spoon and ice the top of the balls.
  • Refrigerate afterwards till chocolate/icing has hardened.
It's that simple.

1. Is there something you've always wanted to try but just can't muster up the courage to actually do yet? There is. For some strange reason I don't like fish. However, I recently tried grilled Tilapia and loved it! But when I say fish, I mean raw fishy stuff. Although I have always wanted to try [just once to say I've tasted it]....tuna. Ughhhhk. Just the sound of it makes me want to bluuuuhhhh.

2. If you had $100 handed to you in cash without your significant other knowing about it, what would you spend it on? A definite pedi. I was talking to a friend today about this topic. And ya know, I have not had a pedi in over two, maybe three years! It's insane!! I have gotten wayy to cheap. Then after my $20 pedi, I would go purchase some new sandals, and maybe a dress or two. Oh, and some earrings. I am way behind on the new fashion trends.

3. What was your favorite piece of playground equipment as a child? The merry-go-round. I can remember holding the handle bars and running as fast as I could to get it spinning crazily, then jumping on. Now, just the thought of doing that gets me nauseous. I have bad motion sickness ever since my early teen years.

4. Do you prefer a sweet or hearty breakfast? Mmm.. a hearty breakfast. I do like a doughnut, cinnamon roll, strudel w/ icing..that kinda thing every once in a while :)

5. Are you a Neat Freak or a Messy Bessy? A neat freak! I can not stand clutter. At all. In the least little bit. I think I've become a little OCD about some things. My fiance has trouble placing his toothbrush/toothpaste back into the holder. I freak! Every.single.morning. Ha. Good thing he is gone before I wake ;) I'm not tooooo terribly bad. I just like things to be neat, and clean!

The questions..

1. The most expensive thing hanging in my closet is.....?  A dress from Cache [yes, I actually had to get up off my butt and go browse through my closet to figure this one out, ha!]

2. Have you ever played a team sport? I have. I've played softball [slow-pitch growing up, fast-pitch in middle/high],  cheerleading, cross-country, & tennis.

3. If you were a bug, what kind would you be? A ladybug :)

4. Where on your body is the worst place to get sunburned? Shoulders, most definitely. Hate it when it's so burnt you can barely rest your purse on either shoulder. Or, tanning bed burnt-- your rear. That's awful! Can't sit, can't lay, can't shower with hot water.. uhh, makes my skin crawl.

5. Are you happy? I am! However, I've been missing my hunny for days now. I'll be even happier when he returns home late this evening!

apologies.


Whew.  Nursing semester #2 = check! I have FINALLY completed my first full year of nursing school at GSU last week. I apologize sincerely for not keeping up for the past week or so. I finished my last exam/day of class last Thursday, took the day to relax with some nursing friends [before splitting for summer] on Friday, attended my dear cousins graduation at GSU on Saturday morning followed by a friends 21st birthday Saturday night, and of course, Mother's Day on Friday. Can we say busy? Oh, and I forgot to mention.. I started my NEW summer job yesterday!  Oh yea. 

[Friday night we threw a "girly" party for us nursing students]


Brooke & I brought buffalo chicken cheese dip
Ingredients: 
  • 2 chicken breasts halved
  • 1 teaspoon olive oil
  • 1 stalk celery, finely diced
  • 1 (8-oz) package of cream cheese
  • 3/4 cup blue cheese dressing
  • 3/4 cup ranch dressing
  • 1/3 cup hot pepper sauce (such as Frank's)
  • 1 cup shredded cheddar cheese
Directions:
  1. Place chicken breasts in a large saucepan; cover with water. Boil until cooked through, about 20 minutes. Remove from water, and cool. Pull meat from bones and skin. Shred meat and reserve.
  2. Preheat oven to 350 degrees.
  3. Heat olive oil in large skillet. Stir in celery; cook until soft. Mix in the cream cheese, blue cheese dressing, and ranch dressing. Cook and stir until smooth and creamy. Stir in the shredded chicken and hot sauce. Spoon mixture into an 8x8 baking dish. Sprinkle with the shredded cheese.
  4. Bake in preheated oven until golden and bubbly, about 30 minutes. 
[Rather than spooning mixture in baking dish, we placed it in a crock pot on low heat.]

It was DELICIOUS! Best appetizer to date!


Anyhow, I have caught a break to say hello and that I have not forgotten about you all. I still have found time in between car rides, quick breaks, etc. to catch up on all the blog updates. In saying so, I hope everyone had a wonderful Mother's day! 

We surprised my Mother after church Sunday morning by taking her to the movies to see "Death at a Funeral" [in which she had requested to see a few weeks back]. Pretty darn funny I'd have to say. A pretty good bit of foul language, but overall, it was hilarious.  

We ended the evening with grilled hamburgers, potato chips, and sweet tea at my Grandmother's home.

Couldn't get much better than that.
